Fresh Summer Corn Pudding

This part 2 of my last post. I had mentioned that I made a great meal and I want to share it with you. The other side dish that I made was Fresh Summer Corn Pudding. I have had many different corn pudding recipes over the years and they were good, but this is the first one that I have made that I would call exceptional. It is the right amount of flavors and anything using fresh corn is just so summery. Something we need down here where it is scorching.Your ingredients.
Beat your eggs. I beat them until they were all one color.

Add your corn, onion, and peppers. And then flour, salt, paprika and the kicker, cayenne pepper. It gives it just the right amount of kick. Add melted butter and half and half. Mix mell.

This is a pudding type of dish so you cook it in a 9x13 with a couple of inches of water, placing your casserole dish in the water. There is probably so many grammatical errors in that last sentence but I am typing as I think it!

This stuff is heavenly! Enjoy!
Fresh Summer Corn Pudding
3 eggs
2 cups corn, cut off the cob
1/4 cup chopped onions
1/4 cup chopped green peppers
1/2 cup all purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon ground cayenne pepper
1/4 cup butter melted
1 cup half and half
Whisk your eggs in a medium mixing bowl. Mix in corn, onions, and peppers with a spoon. Add flour, salt, paprika and cayenne pepper, stir well. Add melted butter and half and half. Spoon into a buttered casserole dish. Place the casserole in larger dish with about 1/2 inch water. Bake in a preheated 350 oven for about 40 minutes. Mine needed about 10 min more. Its done when you stick a knife in it and it comes out clean.
